Ingredients (4 servings)

  • spaghetti 320 g
  • egg yolks 6 units
  • salt to taste
  • bacon or pancetta 150 g
  • grated Pecorino cheese 50 g
  • black pepper to taste

Preparation

    Bring a large pot of salted water to a boil and cook the spaghetti until al dente.

    Cut the bacon or pancetta into small pieces and fry until golden brown.

    Mix the egg yolks with the grated Pecorino cheese and plenty of black pepper.

    Drain the pasta, reserving some of the cooking water.

    Off the heat, combine the hot pasta with the bacon and the egg-cheese mixture. Add a little of the reserved cooking water to create a creamy sauce.

    Serve immediately with extra pepper.
