Ingredients (4 servings)

  • Chicken breasts 2
  • All-purpose flour 1/4 cup
  • Egg 1
  • Panko breadcrumbs 3/4 cup
  • Grated Parmesan cheese 1/2 cup
  • Olive oil 2 tablespoons
  • Marinara sauce 1 cup
  • Shredded mozzarella cheese 1/2 cup
  • Fresh basil to taste (optional)
  • Salt and pepper to taste

    Slice the chicken breasts in half lengthwise to create four cutlets. Lightly pound them flat, then season with salt and pepper.

    Preheat the oven to broil and place a rack in the upper part of the oven.

    Prepare three shallow dishes: one with flour, one with beaten egg, and one with panko breadcrumbs mixed with Parmesan cheese.

    Dredge each chicken piece first in the flour, then in the egg, and finally in the panko-Parmesan mixture.

    In a large skillet, heat the olive oil over medium heat. Cook the chicken for 4 to 5 minutes per side, until golden brown and an internal temperature of 165°F (74°C) is reached.
