Ingrédients (4 portions)

  • Onion 1 piece
  • Garlic cloves 2 pieces
  • Italian sausages 4 pieces
  • Red or orange bell pepper 1 piece
  • Chicken breast 1 piece
  • Olive oil 1/2 tablespoon
  • Orzo 2 cups
  • Smoked paprika 1 tablespoon
  • Herbes de Provence 1 tablespoon
  • Thyme 1 teaspoon
  • Pepper to taste
  • Unsalted chicken broth + extra if needed at the end 4 cups
  • Tomato paste 3 tablespoons
  • Broccoli florets 1 cup

Préparation

    Chop the onion and garlic. Remove the casings from the Italian sausages. Dice the bell pepper and chicken.

    In a large non-stick skillet, heat the oil over medium-high heat. Cook the onion, crumbled sausage meat (like ground meat), and chicken for 5 to 7 minutes or until the chicken is browned.

    Add the garlic, bell pepper, orzo, and spices (smoked paprika, oregano, basil, thyme, pepper). Pour in the broth, stir in the tomato paste, and bring to a boil.

    Reduce to medium-high heat and cook for 10 to 12 minutes or until the orzo is tender, stirring occasionally.

    Stir in the broccoli about 3-4 minutes before the end of cooking to keep it crisp. Remove from heat and let rest, covered, for 5 minutes. Serve.
Notes & Astuces du chef

Chef's Tips: Make sure to crumble the sausage meat well so it mixes evenly throughout the dish. Spread any leftover tomato paste in 15 ml (1 tablespoon) dollops on a parchment-lined plate. Place the plate in the freezer.
